Ingredients
- 1 tablespoon butter
- 1/2 cup uncooked white rice
- 1 cup water
- 1/2 cup hoisin sauce
- 1/2 cup barbeque sauce
- 1 tablespoon peanut butter
- 1 1/2 teaspoons soy sauce
- 1 clove garlic, minced
- 1 teaspoon grated fresh ginger root
- 2 teaspoons sesame oil
- 1 cup chopped onion
- 1 cup grated carrot
- 2 cups frozen pea pods
- 2 cups frozen chopped broccoli, thawed
- 2 eggs
- 1/4 cup sesame seeds, lightly toasted
Instructions

Heat the butter in a small saucepan over medium heat, stirring constantly until it reaches its melting point. Introduce the uncooked rice into the saucepan and cook, stirring occasionally, until it develops a light golden color.

Add water to the saucepan and bring the mixture to a rolling boil. Gradually decrease the heat to a low setting, cover the saucepan with a lid, and let it simmer for approximately 15 minutes or until the rice is tender.

Meanwhile, combine hoisin sauce, barbeque sauce, peanut butter, soy sauce, garlic, and ginger in a bowl.

Set the mixture aside until it is ready to be incorporated into the cooked rice.

In a wok or large skillet, heat sesame oil over medium-high heat. Allow the oil to smoke slightly before adding sliced onions and frying until they are translucent.

Add grated carrots to the wok and cook for about 1 minute, then add cooked rice and stir-fry for approximately 2 minutes. Introduce broccoli and peas into the wok, cooking and stirring them for about 1 minute.

Push all ingredients to one side of the wok, crack eggs into the center, and scramble them until cooked through.

Gently mix the scrambled eggs with the rice.

Turn off the heat and stir in half of the sauce mixture, tasting as you go and adding more if desired.

Serve the dish hot, sprinkling sesame seeds on top for added flavor and texture.
