  • 1 egg
  • 1 teaspoon ground ginger
  • 1 pinch salt
  • 2 cups self-rising flour
  • 1 cup chopped crystallized ginger
  • 2 tablespoons white sugar, or as needed

Begin by preheating your oven to a high temperature of 350 degrees Fahrenheit, or 175 degrees Celsius. Next, take two baking sheets and give them a light coating of oil to prevent sticking

Then, in a large mixing bowl, combine the softened butter, half a cup of white granulated sugar, and brown sugar. Use an electric mixer to blend these ingredients together until they achieve a smooth consistency, taking around 1 to 2 minutes

Add one egg, a pinch of ground ginger, and a small amount of salt to the mixing bowl. Mix these ingredients together until they are well combined, taking another 1 to 2 minutes

Gradually incorporate the flour into the mixing bowl until you have a cohesive cookie dough, which should take around 1 to 2 minutes

In a separate shallow dish, place two tablespoons of white granulated sugar. Take the dough and shape it into small balls. Roll one side of each ball in the sugar, then gently press them onto the prepared baking sheets
