Ingredients
- 5 potatoes
- 2 tablespoons vinegar
- 1/2 teaspoon white sugar
- salt and ground black pepper to taste
- 1 onion, finely chopped
- 2 tablespoons pickled gherkins, chopped
- 1/4 cup creamy salad dressing (such as Miracle Whip®)
- 4 hard-boiled eggs, cut into wedges, divided
- 2 tablespoons chopped fresh parsley, or as desired
Instructions
1
Begin by submerging the potatoes into a large container filled with salted water, and then bring the mixture to a rolling boil.
2
Then, decrease the heat to a moderate level and let it simmer for approximately 20 minutes, or until the potatoes are tender.
3
Next, remove the potatoes from the pot and discard their outer layers. Cut them into smaller pieces.
4
To create the salad dressing, combine vinegar, sugar, salt, and pepper in a large bowl.
5
Mix the salad dressing ingredients together until well combined.
6
Add the sliced potatoes, chopped onion, and gherkins to the bowl with the salad dressing.
7
Mix everything together until the potatoes and vegetables are evenly coated.
8
Incorporate 3/4 of the egg wedges into the potato mixture.
9
Top the salad with the remaining egg wedges and sprinkle some parsley for garnish.
10
Finally, cover the bowl with plastic wrap and refrigerate it for 1 hour before serving.
