Ingredients
- 4 cups cubed potatoes
- 6 slices bacon
- 1 cup diced celery
- 3 green onions, diced
- 1/2 cup mayonnaise
- 1/4 cup vinegar
- 2 teaspoons white sugar
- 1 teaspoon Dijon mustard
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 cup shredded Cheddar cheese
Instructions
1
Heat your oven to the temperature of 350 degrees Fahrenheit (175 degrees Celsius).
2
Boil the potatoes in a large container filled with salted water until they are tender, which should take around 20 minutes. Switch to a lower heat setting and let them simmer for the remaining time. Remove from heat; transfer potatoes to a large baking dish.
3
Cook the bacon in a large skillet over high heat, stirring occasionally until it is evenly browned on both sides. Remove excess fat from the skillet using paper towels; crumble and sprinkle the cooked bacon over the potatoes.
4
Heat a skillet over medium heat, stirring occasionally until the celery is tender, which should take around 5 minutes. Transfer the cooked vegetables to the baking dish.
5
Combine mayonnaise, vinegar, sugar, mustard, salt, and black pepper in a bowl until they are well blended. Pour the mixture over the potatoes and stir until everything is evenly coated. Sprinkle with Cheddar cheese.
6
Place the baking dish in the preheated oven and let it bake until the cheese is melted, taking anywhere from 20 to 35 minutes.
