- 1 tablespoon chopped fresh cilantro

Submerge potatoes in a large container filled with salted water; heat the mixture until it reaches a rolling boil. Decrease the temperature to a low-medium setting and maintain this heat for approximately 20 minutes, or until the potatoes are tender; discard the water.

Heat a moderate amount of vegetable oil in a pan over medium heat; cook sliced onion continuously, stirring occasionally, until it emits a pleasant aroma, taking around 2 to 3 minutes. Introduce diced tomatoes into the pan and continue cooking until the onion is softened and the tomatoes have become tender, requiring 5 to 10 minutes of additional time. Combine the cooked onion and tomato mixture with the potatoes, adding a blend of spices including garam masala, cayenne pepper, salt, and sugar; continue to cook the mixture over low-medium heat, stirring frequently, until all the flavors have melded together, approximately 5 minutes later. Finally, stir chopped cilantro into the potato mixture and cook for a further minute.
