Garlic Yogurt Zucchini with Dill

  • 1 onion, finely chopped
  • 1 teaspoon white sugar
  • 4 zucchini, chopped
  • 1 cup chopped fresh dill weed
  • 1/4 cup uncooked long grain white rice
  • 1/2 cup water
  • salt and pepper to taste
  • 2 cups plain yogurt
  • 2 cloves garlic, crushed
  • 1/2 teaspoon salt

Heat the olive oil in a skillet over medium heat; cook and stir the onion until it becomes clear, approximately 5 minutes. Combine the sugar with the cooked onion and stir to dissolve, then add the chopped zucchini, dill, and rice. Continue cooking and stirring until the zucchini is tender, roughly 5 minutes. Introduce the water into the skillet and sprinkle with salt and pepper; bring the mixture to a rolling boil. Decrease the heat and let the mixture simmer until the rice is fully cooked, around 20 minutes. Switch off the heat and allow the mixture to cool down to a comfortable temperature.

Prepare a sauce by blending together the yogurt, garlic, and salt in a bowl. Serve the lukewarm zucchini and rice mixture over the sauce.
