- 2 pounds tomatoes
- 1 (8 ounce) package angel hair pasta
- 1 tablespoon olive oil, or as needed
- 4 cloves crushed garlic
- 1 tablespoon tomato paste
- salt to taste
- ground black pepper to taste
- 1 tablespoon chopped fresh basil
- 1/4 cup grated Parmesan cheese

Start by submerging the tomatoes in a large container and covering them with cold water. Just warm it up slightly, then discard the water and repeat the process to get rid of any impurities. Remove the skin from the tomatoes and cut them into tiny pieces.

Meanwhile, fill a large pot with lightly salted water and bring it to the surface. Cook the angel hair pasta in this boiling water, stirring occasionally, until it reaches your desired level of doneness, which should take around 4 to 5 minutes.

In a separate pan or skillet, heat some olive oil until it covers the bottom of the pan. Then sauté the garlic until it becomes translucent but not burnt, stirring occasionally to prevent burning. Add the tomato paste and stir it in immediately.

Add the tomatoes, salt, and pepper to the pan with the garlic and tomato paste. Reduce the heat and let it simmer until your pasta is cooked, about 4 to 5 minutes. Add some fresh basil leaves towards the end of this time.

Once your pasta is done, drain it and toss it with a small amount of olive oil to prevent sticking. Then mix the pasta into the sauce.

Finally, lower the heat to its lowest setting and keep the sauce warm, uncovered, for around 10 minutes before serving. Finish it off with a generous sprinkle of fresh Parmesan cheese.
