  • 2 cloves garlic, minced
  • 1 teaspoon ground thyme
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground black pepper

Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).

Prepare a baking sheet by lining it with parchment paper to prevent sticking.

Cut the fennel into thin, uniform slices, making sure to keep the green fronds separate for later use as a garnish if desired. Remove any damaged or woody stalks, but leave the root ends intact to create a flat surface.

Combine olive oil, vinegar, minced garlic, dried thyme, salt, and pepper in a small bowl. Whisk the ingredients together until well combined.

Brush the mixture evenly over the fennel slices, making sure they are all coated.
