- 1 pinch cayenne pepper
- 1/4 teaspoon smoked paprika
- 3 cloves garlic, crushed, or more to taste
- 2 thick slices French bread
- 6 tablespoons clarified butter, melted, divided
- 2 teaspoons fresh lemon zest
- 2 tablespoons fresh lemon juice
- 1/2 cup heavy cream
- 2 tablespoons minced fresh Italian parsley
- 1 pinch salt, or to taste

Begin by placing the butterfly shrimp in a bowl and sprinkle with cayenne, paprika, and minced garlic. Mix well to ensure the shrimp are evenly coated with the spices.

Next, take most of the crust off the bread and set it aside.

In a skillet over medium heat, melt 4 tablespoons of butter. Add the slices of bread and toast until golden brown, taking about 3 to 4 minutes per side. Remove the toasted bread from the skillet and wipe out any crumbs that remain.

Now, add the remaining melted butter to the skillet and turn up the heat to high. When the pan is extremely hot and you notice a slight wisp of smoke, carefully add the shrimp using tongs to spread them out into an even layer. Sear the shrimp for 1 minute without stirring or tossing.

Sprinkle a pinch of lemon zest over the shrimp and add some fresh lemon juice and heavy cream. Use a spoon to gently scrape any browned bits from the bottom of the pan, allowing the cream to boil and reduce for 1 ½ to 2 minutes as the shrimp finishes cooking and the sauce thickens.

Turn off the heat and stir in some chopped parsley. Taste the dish and add salt if needed to bring out the flavors.

Finally, divide the cooked shrimp and sauce evenly over each piece of toasted bread.
