Garlic Shrimp Scampi with a Hawaiian Twist
Ingredients
  • 1 head garlic
  • 4 tablespoons unsalted butter
  • 1 pound frozen large deveined, shell-on shrimp, thawed
  • 2 tablespoons rice flour
  • 1 tablespoon paprika
  • 1 teaspoon cayenne pepper
  • 1 1/2 teaspoons kosher salt
  • 2 tablespoons olive oil

Separate the individual cloves of garlic into a bowl and position another bowl on top. Gently rock the bowls back and forth for about 30 seconds, taking care not to shake too vigorously and risk damaging the delicate cloves. Remove any remaining peels from the garlic by gently rubbing them off with your fingers, about 30 seconds.

Melt butter in a sauté pan over medium heat and add the chopped garlic. Cook, stirring occasionally, until the mixture reaches a golden brown color, approximately 2 to 3 minutes. Transfer the garlic and butter mixture into a small bowl for later use.

Pat the thawed shrimp dry with paper towels to remove excess moisture. Add the shrimp to a large mixing bowl.

In another small bowl, combine the rice flour, paprika, cayenne pepper, and salt. Sprinkle this mixture evenly over the shrimp and use a large spoon or spatula to thoroughly coat each piece.

Heat olive oil in a nonstick skillet over medium-high heat. Add the shrimp in a single layer and cook until they are browned on both sides and just cooked through, about 2 to 3 minutes per side. Add a spoonful of the garlic butter and cook for an additional 30 seconds. Repeat this process with the remaining shrimp and garlic butter. Serve the dish immediately
