  • 4 garlic scapes, tops trimmed and stems finely chopped
  • 3 tablespoons chopped fresh parsley
  • salt and ground black pepper to taste
  • 1 tablespoon freshly grated Parmesan cheese

Fill a large pot with salted water and heat it until it reaches a vigorous boil. Introduce the spaghetti into the pot and restore the water to a rolling boil. Continue cooking, uncovered, with periodic stirring, until the pasta reaches your desired level of doneness - it should still have some firmness to it, but not be hard or crunchy. Remove from the heat source and proceed to drain the spaghetti.

In a deep skillet, warm olive oil over medium-high heat until it reaches its smoke point. Immediately remove the skillet from the heat and introduce the garlic scapes into the oil; allow them to sit for 3 minutes, infusing their flavors. Combine the parsley with the garlic scapes and season with salt and pepper to taste. Finally, serve the seasoned mixture over your cooked spaghetti, topping it off with a generous sprinkling of Parmesan cheese.
