Ingredients
- 1/2 cup olive oil
- 1 tablespoon Dijon mustard
- 3 cloves garlic, minced
- 1 lemon, juiced
- 1 orange, juiced
- 1 teaspoon dried basil, or to taste
- 2 tablespoons white wine
- 30 tiger prawns, peeled and deveined

Combine the olive oil, mustard, garlic, lemon juice, orange juice, and basil in a glass dish. Add the white wine to the mixture and stir well.

Add the prawns to the marinade, ensuring they are fully coated. Cover the dish and let it sit for 1 hour to allow the flavors to meld together.

Preheat an outdoor grill to extremely high heat.

Thread the prawns onto skewers, taking care not to overcrowd them. Grill for 3 to 5 minutes on each side, or until the prawns turn pink and are cooked through.

If you wish to reserve some of the marinade, transfer it to a saucepan and bring it to a rolling boil.

Reduce the heat to a low simmer and let the marinade cook for 5 minutes, allowing it to thicken slightly. Serve the prawns alongside their flavorful sauce.
