  • 6 cloves garlic, finely chopped
  • 1 (32 ounce) carton chicken broth
  • 1 (14 ounce) can chicken broth
  • 1 pound frozen cheese tortellini
  • 1 (14 ounce) can diced tomatoes
  • 1 (10 ounce) package fresh spinach, coarsely chopped
  • 10 leaves fresh basil, chopped
  • 1/2 teaspoon red pepper flakes, or to taste
  • 1 pinch salt and ground black pepper to taste
  • 1/2 cup grated Parmesan cheese, or as needed

Preheat a large vessel over medium-low heat, preparing it for the initial stages of cooking. Sauté sliced sausage and onions until they become tender and lose their crispiness, fragmenting the sausage as it cooks, approximately 5 to 7 minutes. Introduce minced garlic into the mixture and continue cooking for an additional 1 to 2 minutes.

Subsequently, pour all available chicken broth into the pot and initiate a boiling process, taking around 5 minutes to achieve this state. Add cooked tortellini and continue cooking for an additional 5 minutes.

Next, add canned tomatoes with their juice to the pot and restart the boiling process. Gradually reduce the heat to a lower setting, allowing the soup to simmer for 10 minutes.

At this stage, incorporate fresh spinach leaves into the soup; initially, it may appear excessive, but they will quickly wilt. Introduce dried basil and red pepper flakes into the mixture and continue simmering for an additional 5 minutes.
