Garlic Sausage Pasta in Creamy Sauce
Ingredients
  • 1/2 cup butter
  • 1 cup all-purpose flour
  • salt to taste
  • white pepper to taste
  • 4 cups milk
  • 1 (16 ounce) package corkscrew-shaped pasta (fusilli)
  • 2 egg yolks
  • 1/4 teaspoon ground nutmeg
  • 1 (12 ounce) package garlic chicken sausage (such as al fresco® All Natural Roasted Garlic Chicken Sausage), sliced

Heat butter in a small saucepan over low heat; blend flour into the melted butter until smooth, 5 to 10 minutes. Add a pinch of salt and a few grinds of pepper for flavor. Introduce milk into the flour mixture; blend until sauce is rich and creamy, 10 to 15 minutes.

Prepare a large pot of water by adding a light sprinkle of salt; bring the water to a rolling boil. Cook pasta in the boiling water, stirring occasionally until it reaches the perfect doneness but still retains a slight firmness in the center, 12 minutes. Drain and transfer to a serving container.

Take the sauce off the heat source; blend in egg yolks and a pinch of nutmeg until fully incorporated. Pour the sauce over pasta; toss to coat evenly.

Cook and stir sausage in a skillet over medium heat until it's nicely browned and cooked through, 5 to 10 minutes. Combine the sausage with pasta; add a pinch of salt and pepper for flavor.
