- 1 (4 pound) leg of lamb, deboned and tied
- 1 tablespoon ground black pepper
- 1 teaspoon salt
- 5 cloves garlic, cut into slivers
- 2 sprigs fresh rosemary
- 1 (15 ounce) can tomato sauce

First, preheat your oven to the desired temperature of 375 degrees Fahrenheit or 190 degrees Celsius.

Next, season the leg of lamb generously with salt and pepper on all sides. Utilize a small knife to create precise holes in the lamb, approximately 1 inch apart, allowing you to insert a small amount of garlic into each one. The garlic should be pressed about halfway down the surface of the lamb.

Then, place the seasoned lamb in a roasting pan. You have two options for securing the lamb: either detach the rosemary from its stalk and sprinkle it liberally onto all sides of the lamb, or use the string attached to the lamb to tie it in place.

After that, pour a generous amount of tomato sauce over the lamb, ensuring it is well-coated.

Finally, bake the lamb in the preheated oven for 45 minutes. Next, reduce the temperature to 325 degrees Fahrenheit or 160 degrees Celsius and continue roasting for an additional 15 minutes, or until the internal temperature reaches at least 130 degrees Fahrenheit. If you prefer your meat cooked to a well-done level, continue cooking until the internal temperature reaches at least 150 degrees Fahrenheit.
