Garlic Prawns with Pisco
Ingredients
  • 10 cloves garlic, peeled and slightly crushed
  • 1/2 cup grapeseed oil or olive oil
  • 1 1/2 pounds large shrimp, peeled and deveined
  • 1 cacho de cabra pepper, or Anaheim pepper, seeded and cut into 1/2-inch pieces
  • 3 tablespoons pisco or brandy
  • salt to taste
  • cayenne pepper to taste
  • 1 lime, cut into wedges, for serving
Instructions
1
Heat the skillet over a high flame, then add the minced garlic and grapeseed oil. Allow the garlic to transform into a rich, caramelized hue as the oil reaches its optimal temperature; proceed with cooking until the garlic has reached a deep golden color and the oil is almost smoking hot.
2
Add the succulent shrimp to the skillet, stirring them gently in the oil to coat evenly; cook for 15 seconds before adding the diced chile pepper. Continue cooking until the shrimp have turned a vibrant pink and are cooked through to perfection.
3
Next, pour in the pisco, allowing it to evaporate for 30 seconds and leaving behind a subtle, slightly sweet flavor. Season the dish with salt to your liking, then transfer it to a serving vessel.
4
Finally, sprinkle a pinch of cayenne pepper over the top and garnish with a wedge or two of fresh lime, presenting your delectable creation to your guests.
