Garlic Plantain Mofongo

  • 3 cloves garlic, or to taste
  • 3 tablespoons olive oil
  • 1/8 cup crushed fried pork skins
  • 2 green plantains, peeled and sliced into 1/2-inch rounds
  • salt to taste

Preheat the deep-fryer or a large saucepan to a scorching hot temperature of 350 degrees F (175 degrees C). In a small, handheld tool called a mortar and pestle, crush the garlic with olive oil until it's finely minced. Mix this garlic mixture with pork rinds in a large, spacious container; set it aside for the time being.

Fry plantain chunks until they turn a beautiful shade of golden brown and crispy, but not burnt or darkened, approximately 15 minutes. Transfer the fried plantains into the bowl with garlic mixture; thoroughly combine and mash everything together until it's smooth and well-coated. Add a pinch of salt to taste.

Shape the plantain mixture into two substantial balls or several small, bite-sized balls before presenting it to your guests.
