- 2 tablespoons fish sauce
- 2 tablespoons light soy sauce
- 1 tablespoon white sugar
- 1/2 teaspoon ground white pepper
- 1/4 cup vegetable oil, divided, or as needed
- 1 pound whole unpeeled prawns, divided

Combine minced garlic, tapioca flour, fish sauce, soy sauce, sugar, and white pepper in a bowl; mix well to create a marinade.

Add the prawns to the marinade and toss gently to coat them evenly.

Heat 2 tablespoons of oil in a large, heavy skillet over extremely high heat.

Add half of the prawns in a single layer; fry until they turn golden brown and crispy, approximately 1 to 2 minutes per side.
