  • 4 thick slices Italian bread, toasted
  • 1 1/2 tablespoons olive oil
  • 1 1/2 pounds fresh or frozen bay scallops, thawed, rinsed and patted dry
  • 4 cloves garlic, minced
  • 1/2 cup white wine
  • 2 tablespoons lemon juice
  • 1/4 cup chopped fresh flat-leaf parsley
  • 4 tablespoons cold butter, cut into cubes
  • 1 pinch cayenne pepper
  • salt and ground black pepper to taste

Apply a thin layer of softened butter to one side of each slice of bread, making sure to cover the entire surface evenly.

Heat a generous amount of oil in a large skillet over extremely high heat. As the oil reaches its smoke point, carefully pour the scallops into the pan; cook for 30 seconds without disturbing them.

Mix the scallops in the pan and add minced garlic; continue to cook and stir until the aroma is released, approximately 30 seconds.

Combine the wine and lemon juice in the pan; bring the mixture to a boil and cook for 30 seconds.

Add chopped parsley and melted cold butter to the pan; remove from heat immediately.
