- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon ground nutmeg
- Salt and ground black pepper

Combine milk, spinach liquid extracted from 1/2 cup fresh spinach leaves, and minced garlic in a 1-quart microwave-safe container or small bowl covered with a heat-resistant plate; heat until extremely hot and steamy, taking care not to boil. Allow the mixture to rest for 5 to 10 minutes, or until the garlic has become soft and mellow.

Next, melt butter in a large cooking vessel over medium-high heat. Whisk the flour into the melted butter to create a smooth paste. Gradually pour in the hot milk mixture, whisking continuously until well combined.
