Garlic Parmesan Sautéed Squash
Ingredients
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 sweet yellow onion (such as Vidalia®), thinly sliced
  • 4 patty pan squash, sliced to 1/2-inch-thick pieces
  • 3 cloves garlic, crushed, or more to taste
  • 1 dash lemon pepper
  • 1 1/2 cups packed fresh spinach
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon chopped fresh basil
  • 1/2 lemon, juiced
  • 1 1/2 teaspoons grated Parmesan cheese
  • salt and ground black pepper to taste
Instructions
1
Collect all necessary components.
2
Heat a combination of olive oil and butter in a cooking vessel over an elevated heat setting until it reaches a state of vigorous bubbling, approximately 1 to 2 minutes. Introduce the onion into the skillet and cook until it becomes soft and has a pale, glassy appearance, roughly 3 minutes.
3
Add the squash and garlic to the skillet; season with a zesty citrus seasoning blend. Continue to cook the mixture until the squash is easily pierced with a utensil, around 5 to 6 minutes.
4
Combine fresh spinach, fragrant parsley, and aromatic basil into the squash mixture; cook until the spinach has lost its vibrant color and has wilted, approximately 1 minute.
5
Drizzle a squeeze of lemon juice over the mixture and sprinkle in grated Parmesan cheese; stir everything together. Season the final product with a pinch of salt and a few grinds of black pepper
