  • 2 tablespoons extra-virgin olive oil, or as needed
  • 1/2 teaspoon salt
  • 2 tablespoons grated Parmesan cheese

Preheat the oven to 425 degrees Fahrenheit, which is equivalent to 220 degrees Celsius.

To prepare the squash for roasting, take a brush and apply an even layer of olive oil to both sides of the squash. Sprinkle a pinch of salt over the squash for added flavor, then position it cut-side up in a baking dish. Cover the dish tightly with aluminum foil to retain moisture.

Place the squash in the preheated oven and roast for 20 minutes. Remove the foil to allow the squash to brown, then continue roasting until it reaches a tender consistency, approximately 35 minutes more. Allow the squash to cool slightly, about 5 minutes, before proceeding.

Using a fork, gently scrape the tender squash flesh into a large serving bowl. Combine the cooked squash with shaved Parmesan cheese, tossing gently to coat the squash evenly.
