- 1 clove garlic, smashed
- 1/4 cup grated Parmesan cheese
- 1 tablespoon reduced-fat cream cheese
- 1/2 teaspoon kosher salt
- 1/8 teaspoon freshly ground black pepper

Insert the steamer basket into a saucepan; fill it with water, leaving about an inch of space at the bottom. Bring the water to a rolling boil; then add the cauliflower, cover it with a lid, and steam until it reaches your desired level of tenderness, approximately 10 minutes.

In a small skillet, heat the olive oil over medium heat; cook and stir the garlic until it becomes soft and fragrant, roughly 2 minutes. Set the skillet aside.

Transfer half of the cauliflower to a food processor; secure its lid and process on high speed. Gradually add the remaining cauliflower florets, one at a time, until you achieve your desired consistency. Blend in the cooked garlic, Parmesan cheese, cream cheese, salt, and black pepper until well combined.
