  • 3 cloves garlic, slivered, or to taste
  • 3 cloves garlic, minced

  • 1 teaspoon freshly ground black pepper, or to taste
  • 6 Yukon Gold potatoes, quartered
  • 5 carrots, cut into 2-inch pieces
  • 2 large sweet onions, quartered
  • 3 cubes beef bouillon
  • 1/2 cup hot water
  • 1 cup beef broth
  • 1/2 cup beer
  • 2 bay leaves, broken, or more to taste
  • 2 large red bell peppers, cut into 2-inch pieces
  • 1/2 cup mushrooms

Make shallow incisions in the beef roast using a sharp blade; insert minced garlic into each cut. Coat the entire roast with a mixture of minced garlic, paprika, salt, and ground black pepper. Allow the beef to come to room temperature for 15-30 minutes.

Preheat your oven to a moderate heat of 325 degrees Fahrenheit (165 degrees Celsius).

Arrange the potatoes, carrots, and onions in a uniform layer on a 9x12-inch roasting pan. Dissolve the beef bouillon cubes in hot water and pour over the vegetables. Add the beef broth and beer to the pan.

Place the beef roast on top of the vegetables, ensuring it is not fully submerged in the broth mixture. Add some bay leaf pieces around the beef roast.

Bake the beef roast in the preheated oven until it reaches an internal temperature of 150 degrees Fahrenheit (66 degrees Celsius) for medium, taking around 45-60 minutes. Transfer the beef roast to a platter and cover it with aluminum foil, allowing it to rest until it reaches an internal temperature of 155 degrees Fahrenheit (68 degrees Celsius), approximately 10 minutes.

Increase the oven temperature to a high heat of 425 degrees Fahrenheit (220 degrees Celsius). Add the bell peppers and mushrooms to the roasting pan; bake in the preheated oven until the vegetables are tender and lightly browned, taking around 15-20 minutes.
