  • 3 cups hot water
  • 1/2 cup fresh lemon juice
  • 1/3 cup vegetable oil
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons dried oregano
  • 2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley

Preheat your oven to a high temperature of 475 degrees Fahrenheit (or 245 degrees Celsius, if you prefer metric measurements).

Next, prepare a large baking dish or roasting pan by filling it with cubed potatoes, water, lemon juice, vegetable oil, and olive oil. Add some flavor to the dish by sprinkling oregano, salt, pepper, and garlic on top.

Now, place the dish in your preheated oven and roast it uncovered until the potatoes are tender, golden brown, and have lost most of their moisture - this should take around 1 1/2 hours.

Every 20 minutes, give the potatoes a gentle stir to prevent them from sticking to the pan. If they start to stick, you can add a little more water to help things along.

As the potatoes near the end of their cooking time, allow them to dry out a bit more - this will help prevent burning.
