Garlic Lemon Roasted Chicken
Ingredients
  • 3 sprigs fresh thyme, chopped
  • 2 sprigs fresh rosemary, chopped
  • 2 cloves garlic, minced
  • 1 lemon, zested
  • 1 teaspoon olive oil
  • 1 pinch sea salt and pepper to taste
  • 1 (3 pound) whole chicken
  • 4 whole garlic cloves

First, preheat the oven to its highest temperature setting, 425 degrees F or 220 degrees C.

Next, mix together thyme, rosemary, and minced garlic in a small bowl. Add some olive oil to the mixture and stir until well combined. Season with salt and black pepper to taste.

Then, carefully remove the chicken's skin from around the breast and thighs. Rub a mixture of herbs onto the meat, making sure to cover it evenly.

After that, place 1/2 lemon and whole garlic cloves inside the chicken's cavity. Put the chicken in a roasting pan and drizzle any remaining 1/2 lemon juice evenly over the top.

Once the chicken is in the oven, bake it until it reaches a safe internal temperature of 180 degrees F or 82 degrees C. This should take around 1 hour and 35 minutes, or until the juices run clear and it's no longer pink at the bone.

Finally, remove the chicken from the oven and let it rest for 10 minutes before slicing. Cover it with a sheet of aluminum foil to keep it warm and let it sit in a cozy area until you're ready to serve.
