Garlic Lemon Red Snapper
Ingredients
  • 1/4 cup chopped fresh parsley
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon chopped fresh oregano
  • 1 lemon, zested and sliced
  • 3 cloves garlic, minced
  • 2 (1 pound) whole red snappers, cleaned and scaled
  • salt and ground black pepper to taste
Instructions
1
Combine chopped parsley, olive oil, dried oregano, grated lemon zest, and minced garlic in a small bowl for garnishing purposes.
2
Preheat the oven by placing the grill pan inside the Panasonic Countertop Induction Oven and activating the "Auto Cook" function. Set the cooking time to 20 minutes using the Fish setting, which corresponds to a 1-pound serving size.
3
Rinse and dry the red snappers thoroughly with paper towels before preparing them for cooking. Make three diagonal incisions on top of each fish, cutting almost to the bone, but be careful not to cut too deeply.
4
Sprinkle salt and pepper liberally into the cavities of each fish, ensuring they are evenly seasoned.
5
Distribute the parsley mixture evenly onto the inside and top surfaces of each fish, pressing it firmly into the incisions. Position the fish in the center of the grill pan and sprinkle with additional salt and pepper to taste.
6
Once the cooking process is initiated, monitor the temperature of the fish by inserting a meat thermometer into its center. When the internal temperature reaches at least 130 degrees F (54 degrees C), remove the fish from the oven and adjust the cooking time as necessary.
7
Serve the cooked red snappers hot, accompanied by slices of lemon for added flavor and presentation.
