- 1/2 cup sliced shiitake mushrooms
- 3 cloves garlic, minced
- 1 tablespoon butter
- 1 tablespoon wine vinegar
- 1 pinch salt and ground black pepper to taste
- 1 bunch kale leaves, torn (ribs removed and discarded)
- 1/2 teaspoon freshly grated nutmeg

Preheat the wok over medium-high heat by pouring oil into it. Sear and stir the onion, mushrooms, and garlic in the hot oil until the mushrooms become tender, approximately 5 minutes. Introduce butter and vinegar to the mushroom mixture; flavor with salt and pepper to taste. Combine the mushroom mixture in the wok, allowing the butter to dissolve and coat everything evenly, approximately 1 minute.

Transition heat to low and add kale to the wok; cook and stir in the hot wok until the kale turns a vibrant green, around 5 minutes. Season the kale mixture with nutmeg and stir gently to distribute the flavor.
