  • 3/4 cup pure olive oil
  • 2 sprigs fresh thyme

Start by cutting the tops off garlic bulbs to expose their inner cloves. Position the bulbs on a clean, flat surface and use the broad side of a large knife to gently press down on them firmly, causing the individual cloves to separate. Discard the outer skins of the garlic.

Next, heat a small amount of oil in a tiny pot over medium heat. Add the separated garlic cloves and thyme to the pot, stirring occasionally as you cook. Continue to heat the mixture until tiny bubbles begin to form on its surface.

Once the desired consistency is achieved, decrease the heat to its lowest setting and continue cooking until the garlic has softened but remains pale in color, typically taking 20-25 minutes depending on the size of the cloves. Allow the mixture to cool down completely, taking anywhere from 15-30 minutes.

Finally, transfer the cooled garlic mixture to a sterilized jar and seal it tightly before refrigerating it.
