- 2 summer squash
- 1/4 cup olive oil
- 3 cloves garlic, minced, or more to taste
- 1 teaspoon herbes de Provence
- salt to taste

Preheat the oven's temperature control system to 450 degrees Fahrenheit (230 degrees Celsius).

Cut each squash in a longitudinal direction, creating two halves. Then, cut these halves into crosswise sections to produce four pieces from each squash. Next, divide each piece into quarters along its length, resulting in a total of 16 short spears from each squash.

Place the prepared squash spears into a large, deep container. Add olive oil and minced garlic; thoroughly mix the ingredients together to coat each piece evenly.

Arrange the squash mixture in a shallow, open dish. Sprinkle herbes de Provence, salt, and pepper over the top of the squash mixture.

Roast the squash in the preheated oven for 5 to 10 minutes, or until it begins to develop a golden brown color. Check the squash after 5 minutes and again every 2 or 3 minutes thereafter to ensure it does not become overcooked or burnt.
