Garlic Herb Roasted Peppers
Ingredients
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 3/4 cup extra-virgin olive oil
  • 1 clove garlic, minced
  • 5 leaves fresh basil leaves, finely sliced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Preheat your outdoor grill to a high heat setting and lightly brush the metal grates with oil. Decrease the grill's temperature to a medium heat level.

Place whole red, yellow, and orange bell peppers on the preheated grill and cook until they are nicely charred all over, flipping them every 5 minutes or so. Transfer the charred peppers to a sealed container and seal it tightly.

Allow the peppers to cool down completely in their container.

To make a marinade, combine olive oil, minced garlic, chopped basil, dried oregano, salt, and pepper in a 1-pint glass jar. The size of the jar may vary depending on the size of your peppers.

Remove the cooled peppers from their container and scrape off any remaining charred skin. Cut each pepper in half lengthwise; carefully remove the seeds and stems. Slice the peppers into long, thin strips and place them in the marinade mixture. Make sure they are fully coated.

Serve your peppers, and store any leftovers in the refrigerator for up to 5 days.
