Garlic Herb Neapolitan Pizza Dough
Ingredients
  • 3 cups unbleached all-purpose flour (such as King Arthur®), or as needed
  • 1 1/4 teaspoons salt
  • 1/2 teaspoon fast-rising dry yeast
  • 1 1/2 cups ice water, or as needed
  • 2 tablespoons olive oil
  • 1 tablespoon granulated garlic
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon olive oil

Combine dry ingredients in a large bowl, blending flour, salt, and yeast until they are fully incorporated. Gradually add ice water to the mixture, stirring constantly as you incorporate all of the flour and water into a smooth dough. Add 2 tablespoons of olive oil to the mixture, stirring until well combined. Transfer the dough to a floured surface and knead it until it becomes firm but slightly sticky, adding more flour if necessary to achieve the desired consistency.

During kneading, incorporate granulated garlic and Italian seasoning into the dough. Alternatively, use a bread machine set on the Dough setting to perform this step.

Shape the dough into a round and place it in an oiled bowl. Brush the top of the dough with 1/2 teaspoon of olive oil and cover it with plastic wrap. Allow the dough to rise for 1 to 2 hours, or until it has doubled in size.

Once the dough has risen, punch it down and divide it into two equal portions. Form each portion into a 12-inch pizza crust, placing them on pizza pans.

Preheat your oven to the bottom position and set the temperature to 450 degrees F (230 degrees C). Place a rack in this position.

Bake the pizza crusts on the bottom rack for 3 to 7 minutes, or just until they are firm. Remove them from the oven and allow them to cool for about 10 minutes before adding your preferred toppings, such as sauce or cheese.
