- 1 cup long-grain rice
- 1 tablespoon olive oil
- 1/4 cup diced carrot
- 1/4 cup diced celery
- 1/4 cup diced onion
- 2 cloves garlic, minced
- 2 cups chicken stock
- 1 bay leaf
- 1 pinch ground black pepper, or to taste

First, preheat your oven to 350 degrees Fahrenheit (or 175 degrees Celsius). This will ensure that the dish cooks evenly and at the right temperature.

Next, take a 2-quart casserole dish and give it a light coating of cooking spray. This will prevent the rice from sticking to the dish.

Then, spread a generous amount of long-grain rice into the prepared casserole dish. Make sure to cover the entire surface.

After that, heat some olive oil in a saucepan over medium heat. Add diced carrot, celery, and onion to the hot oil and stir constantly until the onion is soft and translucent. This should take around 4 minutes.

Then, add minced garlic to the mixture and stir for another minute. Increase the heat to high and quickly pour in some chicken stock, along with a bay leaf. Bring the mixture to a boil.

Once boiling, pour the liquid mixture over the rice in the casserole dish. Cover the dish tightly with aluminum foil to trap the flavors.

Bake the dish in your preheated oven for 20 minutes. Remove the foil and continue baking until the rice is tender and has absorbed most of the liquid. This should take around 20 minutes more.

Remove the bay leaf and season with some black pepper to taste. Finally, use a fork to fluff up the rice and serve.
