Combine the ingredients of an onion, vinegar, oil, garlic, salt, and pepper in a large storage container with a secure lid. Add the lamb to the mixture and thoroughly mix, ensuring all pieces are coated. Refrigerate for 2 hours to allow flavors to meld.
