Ingredients
- 1 quart oil for frying, or as needed
- 4 large potatoes, cubed
- 1 teaspoon vegetable oil
- 2 cups chopped fresh cilantro
- 4 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon cumin
- salt to taste

Preheat a deep fryer to 375 degrees F (190 degrees C).

Fry potatoes in hot oil until they turn a golden brown color, approximately 8 minutes. Remove the potatoes from the oil and place them on paper towels to drain excess moisture.

In a separate pan, heat 1 teaspoon of oil over medium heat.

Add the chopped cilantro and minced garlic to the pan, stirring occasionally until they are fragrantly cooked for about 5 minutes.

Combine the cooked potatoes, a squeeze of lemon juice, a sprinkle of cumin, and a pinch of salt in the pan. Stir everything together until it's well mixed.
