Ingredients
- 1 serving Vegetable cooking spray
- 1 1/4 pounds skinless, boneless chicken breast halves
- 2 cloves garlic, minced
- 1 3/4 cups Swanson® Chicken Broth or Swanson® Chicken Stock
- 3/4 cup uncooked white rice
- 1 (16 ounce) package frozen vegetable combination (broccoli, cauliflower, carrots)
- 1/3 cup grated Parmesan cheese
- 1 teaspoon Paprika

Preheat your skillet by spraying it with cooking spray and placing it over medium-high heat for 1 minute. Next, add the chicken and garlic to the skillet and cook for a considerable amount of time, or until the chicken is nicely browned on both sides. Remove the cooked chicken from the skillet.

Now, combine the broth, rice, and vegetables in the same skillet and heat it until a rolling boil. After that, decrease the heat to a lower level and cover the skillet. Let it cook for 15 minutes, stirring occasionally. During this time, stir in the cheese to melt and blend it with the other ingredients.

Once again, return the cooked chicken to the skillet. Sprinkle some paprika over the top of the chicken for added flavor. Cover the skillet once more and let it cook for another 10 minutes, or until the chicken is fully cooked through and the rice has become tender.
