Ingredients
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 pound chicken tenderloins, diced
- 1/2 onion, diced
- 1/2 red bell pepper, diced
- 1/2 (15 ounce) can black beans, rinsed and drained
- 1/4 cup chopped fresh cilantro, or to taste
- 1/2 cup chunky salsa
- 4 large flour tortillas, or as needed
- 1/4 cup shredded Mexican cheese blend, or to taste
Instructions
1
Preheat a skillet over medium-high heat, then pour in olive oil to coat the bottom. Allow garlic to sizzle and release its aroma for approximately 1 minute, until it reaches a fragrant state. Next, add the chicken to the skillet and stir constantly until it reaches an internal temperature of 165 degrees Fahrenheit, which should take around 5 to 7 minutes.
2
Combine the cooked chicken with a mixture of sautéed onions, red bell peppers, black beans, and chopped cilantro. Continue to cook the mixture until the onions are tender, taking around 5 minutes.
3
Introduce salsa into the chicken mixture and stir until it reaches a warm temperature, which should take around 1 to 2 minutes.
4
Divide the chicken mixture into tortillas and top with a layer of Mexican cheese blend.
