- 1 (4 pound) pork loin roast
- salt and pepper to taste
- 1 tablespoon olive oil
- 2 carrot, cut into 1/2 inch pieces
- 1 large onion, cut into 1/2-inch pieces
- 1 red bell pepper, cut into 1/2 inch pieces
- 1 stalk celery, cut into 1/2 inch pieces
- 3 tablespoons all-purpose flour
- 1/2 cup chicken broth

First, preheat the oven to its optimal temperature of 300 degrees Fahrenheit (or 150 degrees Celsius).

Next, melt butter in a small skillet over medium heat and stir in garlic, oregano, cayenne pepper, black pepper, thyme, and mustard. Allow the mixture to cook for 1 minute.

Using a paring knife, carefully make several small incisions on the side of the pork loin. Then, fill these slits with the butter-spice mixture and evenly coat the surface of the pork loin with the remaining mixture. Season the pork loin with salt and black pepper to taste.

In a roasting pan, heat olive oil over medium heat and carefully place the pork loin inside. Surround the pork loin with sliced carrots, onion, red pepper, and celery, and lightly season these vegetables with salt and black pepper.

Place the roasting pan in a preheated oven at 300 degrees Fahrenheit (or 150 degrees Celsius) and cook the pork loin for 1 hour and 45 minutes. After this time, increase the oven temperature to 425 degrees Fahrenheit (or 220 degrees Celsius) and cook until the pork loin is nicely browned, approximately 15 minutes. Use a thermometer to check that the internal temperature of the pork loin reaches at least 145 degrees Fahrenheit (or 63 degrees Celsius).

Once cooked, remove the pork loin from the pan and let it stand for 10 minutes before slicing.

Place the roasting pan, including the juices that have accumulated, over medium heat. In a small bowl, whisk together flour and cook for 3 minutes. Then, gradually pour in chicken stock, continuing to whisk occasionally until the sauce has thickened. Strain this sauce through a fine-mesh sieve and serve it alongside sliced pork roast.
