Garlic Butter Poached Salmon
Ingredients
  • 1/2 cup dry white wine
  • 1/2 cup water
  • 2 pounds salmon fillets
  • 2 tablespoons butter, cut into small pieces
  • 1 1/2 teaspoons dried parsley
  • 1 1/2 teaspoons chopped garlic
  • salt and pepper to taste
Instructions
1
Heat the wine and water mixture in a large non-stick pan over high heat for 5 minutes, stirring occasionally to prevent scorching.
2
Carefully place the salmon fillets into the simmering liquid, taking care not to break them. Dot the top of each fillet with a pat of butter, then sprinkle a pinch of parsley, minced garlic, salt, and pepper over the top.
3
Allow the mixture to come to a gentle simmer, then decrease the heat to medium-low and cook until the salmon flesh is firm and flakes easily with a fork, 10 to 15 minutes, depending on the desired level of doneness.
