- 2 whole heads garlic, top third sliced off and discarded
- olive oil
- 1 tablespoon sea salt
- 5 pounds Yukon Gold potatoes, peeled and cubed
- 1 cup sour cream
- 1 cup butter
- 1 (4 ounce) package cream cheese
- salt and ground black pepper to taste

Preheat your oven to the desired temperature of 350 degrees Fahrenheit (175 degrees Celsius).

Take a garlic head and position it in a baking dish. Drizzle the top of each garlic head with 1 tablespoon of olive oil.

Place the baking dish containing the garlic in the preheated oven and let it cook until the garlic is tender, lightly browned, and soft to the touch. This should take approximately 45 minutes.

Simultaneously, fill a large pot with water and bring it to a rolling boil. Add a generous amount of sea salt into the boiling water, then carefully place the potatoes inside to cook until they are tender. This should take around 30 minutes.

Once the potatoes have finished cooking, carefully pour them into a large bowl. Then, add in sour cream, butter, softened cream cheese, salt, and black pepper.

Cover the bowl with a lid or aluminum foil to allow the butter and cream cheese to soften, blending together seamlessly. Let it sit for approximately 5 minutes.

Using a spoon or masher, gently squeeze the roasted garlic cloves into the potato mixture. Continue to mash the potatoes until they are smooth, creamy, and fully incorporated.
