Garlic Butter Marlin with Greek Salad
Ingredients
  • 1/2 cup butter, divided
  • 2 teaspoons minced garlic, divided
  • 3 tomatoes, cubed
  • 4 ounces fresh basil, chopped
  • 2 tablespoons fresh lime juice
  • 2 (6 ounce) swordfish steaks
Instructions
1
Preheat your oven to 350 degrees Fahrenheit (or 175 degrees Celsius if you prefer metric).
2
Melt one-quarter cup of butter with one teaspoon of minced garlic in a medium-sized saucepan over low-medium heat. Combine the mixture with diced tomatoes, chopped basil, and a squeeze of fresh lime juice. As soon as the mixture starts to simmer, lower the heat to a low setting.
3
Melt the remaining butter in a small saucepan; add the additional garlic for extra flavor.
4
Place the swordfish fillets in a baking dish; brush them generously with the garlic-infused butter.
5
Place the swordfish in the preheated oven for 7 minutes. Flip the fish over and continue baking until it flakes easily with a fork, which should take an additional 7 minutes.
6
Spoon the tomato mixture over the cooked swordfish to serve. Drizzle with the pan juices that have accumulated during cooking.
