Ingredients
- 1/4 cup olive oil
- 1/4 cup butter
- 3 cloves garlic, crushed
- 3 large tomatoes, diced
- 1/2 cup chopped fresh parsley
- 1 (6.5 ounce) can minced clams, with juice
- 1/2 pound linguine pasta
- 1/2 cup freshly grated Parmesan cheese
Instructions
1
Heat the olive oil and butter in a medium-sized cooking vessel over a moderate temperature. Combine diced tomatoes, chopped parsley, and minced garlic in the pan; let them cook together for a period of time until they have reduced slightly, approximately 5 minutes. If the sauce becomes too concentrated, you can add a splash of clam juice to help balance it out.
2
In the meantime, prepare a large container of salted water and bring it to a rolling boil. Add your chosen pasta shape to the pot and cook for 3 minutes, or until it reaches the desired level of doneness; then drain the water.
3
Combine the cooked pasta and clams in the skillet with the tomato sauce, and gently warm everything through together. Finally, sprinkle a generous amount of grated Parmesan cheese on top and serve the dish hot, straight from the pan.
