Garlic Bok Choy Stir-Fry
Ingredients
  • 1 pound bok choy
  • 1/4 cup water
  • 2 cloves garlic, minced
  • 1 tablespoon oyster sauce
  • 1 tablespoon light soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon grated fresh ginger root
  • 1/8 teaspoon crushed red pepper flakes
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame oil

Remove any damaged or discolored ends from the bok choy and discard them. Cut the remaining bok choy into smaller pieces, making sure to keep the white stems and green leaves separate. Give them a thorough rinse under cold running water, then gently shake off any excess moisture using a salad spinner or pat them dry with paper towels.

Combine the water, minced garlic, oyster sauce, soy sauce, brown sugar, grated ginger, and pepper flakes in a bowl. Mix everything together until the ingredients are well incorporated.

Heat both oils in a large wok over medium-high heat. Add the white bok choy stems and stir-fry them until they begin to lose their vibrant color, approximately 2-3 minutes. Add the green bok choy leaves and stir-fry them until they have wilted, about 1-2 minutes. Remove the wok from the heat and transfer the cooked bok choy to a serving dish.

Pour the prepared sauce into the wok and return it to the stovetop over medium-high heat. Cook, stirring constantly, until the sauce has thickened slightly and reached your desired consistency, around 3 minutes.

Finally, pour the prepared sauce over the cooked bok choy and toss it gently to coat everything evenly.
