Garlic and Onion Spaghetti
Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 3 white onions, halved and thinly sliced
  • 8 cloves garlic, minced
  • 1 teaspoon white sugar
  • 1/2 teaspoon salt
  • 1 (12 ounce) package spaghetti
  • 1/2 cup dry Chardonnay
  • 3/4 cup heavy whipping cream
  • 2 tablespoons grated Parmesan cheese
  • cracked black pepper to taste

Heat the butter and olive oil in a saucepan over low heat, allowing them to melt together. Combine the softened butter and oil with the sautéed onions, garlic, sugar, and salt. Cover the pan and gently simmer until the onions are tender and translucent, stirring occasionally to prevent burning, approximately 20 minutes.

In a separate large pot, bring the water to a rolling boil and season it lightly with salt. Cook the spaghetti in the boiling water, stirring occasionally to prevent the pasta from sticking together, until it reaches a perfect doneness but still retains some firmness in the center, roughly 7 minutes. Remove from heat and keep warm.

Add a generous amount of Chardonnay to the onion mixture, stirring constantly as it comes to a boil; then reduce the heat to low and let simmer until most of the liquid has evaporated, around 2-3 minutes. Stir in the heavy cream and continue to simmer until it has thickened slightly, approximately 2 minutes.

Transfer the cooked spaghetti to a serving dish and pour the onion sauce over it, sprinkling with Parmesan cheese and black pepper to taste. Gently toss the pasta to coat it evenly with the flavorful sauce
