- 1 teaspoon salt
- 2 medium potatoes, peeled and cut into 1-inch cubes
- 2 cups cauliflower florets
- 1 medium yellow onion, cut into 1/2-inch wedges
- 2 tablespoons minced cilantro

Preheat your oven to a high temperature of 425 degrees Fahrenheit or 220 degrees Celsius.

Next, take a baking sheet and cover it with parchment paper to prevent sticking.

To make the marinade, combine a small amount of olive oil with garam masala and salt in a tiny bowl. Mix well until the ingredients are fully incorporated.

In a large container, combine diced potatoes, cauliflower, and chopped onion.

Drizzle the vegetable mixture with the oil-garam masala-salt mixture and toss everything together until they are evenly coated.

Pour the vegetable mixture onto the prepared baking sheet.

Place the baking sheet in the preheated oven and stir every 10 minutes. Continue cooking until the vegetables are tender and have developed a nice brown color on their edges, taking around 30 to 35 minutes.
