Fry Bread Tacos
Ingredients
  • 1 (15.5 ounce) can pinto beans, with liquid
  • 1/2 cup picante sauce, divided
  • 1 pound ground beef
  • 1 (1.25 ounce) package taco seasoning mix
  • 2 cups all-purpose flour, or more as needed
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • oil for frying
  • 2 cups shredded iceberg lettuce
  • 1 cup shredded Cheddar cheese
Instructions
1
Combine the beans with 2 tablespoons of spicy sauce in a small saucepan over low heat, allowing it to warm through. This process should take approximately 5 minutes.
2
Simultaneously, combine the ground beef with a taco seasoning blend in a large skillet over medium-high heat. Continue cooking until it reaches a browned state, taking anywhere from 5 to 8 minutes. Cover the skillet and keep it warm while you prepare the fry bread.
3
In a separate, medium-sized bowl, whisk together the flour, baking powder, and salt. Gradually add milk to the mixture until it forms a cohesive dough. If necessary, adjust the amount of flour to achieve a manageable consistency.
4
On a lightly floured surface, knead the dough for at least 5 minutes until it becomes smooth. Allow the dough to rest for an additional 5 minutes. Divide the dough into 3/4 cup-sized pieces and shape each piece into a round disc, approximately 1/4 inch thick. Create a slight depression in the center of each disc.
5
Heat 1 1/2 inches of oil in a large, deep heavy skillet to 365 degrees F (180 degrees C). Fry the dough discs in the hot oil until they are golden on both sides, taking approximately 3 minutes per side. Remove the fry bread from the oil and place it on paper towels to drain excess oil.
6
Finally, assemble your dish by topping the fry bread with beans, ground beef, lettuce, and Cheddar cheese. Spoon the spicy sauce on top to complete your meal.
