Fruit Basket Pie
Ingredients
  • 1 recipe pastry for a double crust 9-inch pie
  • 1 cup white sugar
  • 3 tablespoons all-purpose flour, or more as needed
  • 1/2 teaspoon ground cinnamon
  • 1 pinch freshly grated nutmeg
  • 2 cups peeled, cored and sliced apples
  • 1 cup peeled, pitted and sliced peaches
  • 1 cup peeled, cored and sliced pears
  • 1 cup pitted and sliced plums
  • 1 teaspoon grated fresh ginger root
  • 1 tablespoon lemon juice
Instructions
1
Preheat your oven to the highest temperature setting, which is 425 degrees Fahrenheit or 220 degrees Celsius. Next, take a 9-inch pie plate and cover its surface with pastry dough to prevent it from sticking during baking.
2
In a small bowl, combine granulated sugar, all-purpose flour, ground cinnamon, and ground nutmeg. Mix these dry ingredients until they are well combined, then sprinkle 1/4 cup of this sugar mixture evenly over the pastry-lined pie plate.
3
In a separate bowl, combine sliced apples, peaches, pears, plums, and crystallized ginger. Sprinkle a squeeze of fresh lemon juice over the fruit mixture to bring out its natural flavors, then stir everything together until it is well distributed. Pour the fruit mixture into the pie plate and sprinkle with any remaining sugar mixture.
4
Cover the fruit filling with another layer of pastry dough, pressing it firmly onto the top to seal both the top and bottom crusts together. Use a sharp knife to cut a few slits in the top pastry, allowing steam to escape during baking. Alternatively, you can create a lattice crust by weaving strips of pastry dough on top.
5
Bake the pie in your preheated oven for 15 minutes, then reduce the temperature to 350 degrees Fahrenheit or 180 degrees Celsius and continue baking until the pastry crust is golden brown and the fruit filling has thickened, approximately 35 minutes. Finally, let the pie cool completely before serving.
