Frozen Peach Pie

  • 2 sheets refrigerated pie crust
  • 2 teaspoons all-purpose flour, or as needed
  • 2 pounds sliced frozen peaches
  • 1/2 cup white sugar
  • 1 teaspoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 3 tablespoons cornstarch
  • 1 large egg, beaten
  • 1 tablespoon white sugar
  • 1 tablespoon coarse sparkling sugar

Allow the pie crusts to come to room temperature, as suggested by the manufacturer's instructions.

Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).

Unwrap the pie crusts and take one out, placing it on a lightly floured surface. Sprinkle some flour over the dough to prevent sticking, then gently roll it out.

Place the rolled-out dough into a 9-inch pie pan, pressing and stretching it to fit snugly inside.

In a large bowl, combine the frozen peaches, sugar, cornstarch, lemon juice, cinnamon, and salt.

Pour the peach mixture into the pie crust, using a spoon to smooth out the top of the peaches.

Take another piece of dough and roll it out on a floured surface, just like the first one.

Carefully place the second dough circle over the peaches, making sure it's evenly spread and covers the entire surface.

Leave a small border around the edge of the pan, allowing some dough to hang over and create a crust.
