Ingredients
- 1 pound ripe peaches - peeled, pitted, and chopped
- 2 tablespoons lemon juice
- 1/2 cup water
- 1/2 cup white sugar

Mash peaches with a fork or potato masher until they reach your desired consistency. Transfer the blended mixture to a large bowl and scoop out 1 ½ cups of the peach mixture into it. Add a squeeze of fresh lemon juice right away and chill in the refrigerator.

Combine water with sugar in a small saucepan and heat it over high heat until boiling point is reached. Stir constantly to ensure the sugar dissolves, taking about 1 minute. Remove the saucepan from heat and let it cool down to room temperature, then refrigerate until completely chilled, which should take about 1 hour.

Pour the chilled peach mixture and simple syrup into an ice cream maker and follow its guidelines to freeze according to the manufacturer's instructions, approximately 20 minutes. Transfer the frozen mixture to an airtight container and keep it frozen until solid, roughly 4 hours.
