Fried Rice with Spam
Ingredients
  • 1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), cubed
  • 1 tablespoon sesame oil
  • 1 onion, diced
  • 4 cups leftover cooked rice
  • 1 cup frozen peas and carrots
  • 4 large eggs, beaten
  • 2 tablespoons soy sauce
  • 1/2 tablespoon Sriracha
  • 4 large eggs
  • salt and ground black pepper to taste
  • 1 tablespoon shredded nori, or to taste
  • 1 tablespoon sliced scallions, or to taste
  • 1 teaspoon sesame seeds, or to taste
  • 1 teaspoon black sesame seeds, or to taste

Preheat a large skillet over medium-high heat to sear ingredients quickly. Add the processed meat, commonly referred as Spam, and cook until it develops a light brown color, taking anywhere from 5 to 7 minutes. Transfer the cooked Spam to a plate for later use.

In the same skillet, heat sesame oil until it reaches its smoke point and starts to shimmer, which usually takes about 1 minute. Add the onion and sauté until it becomes slightly tender, requiring around 5 minutes of cooking time. Lower the heat and add cooked rice and frozen vegetables; mix well and cook until heated through, taking about 5 minutes to achieve the desired consistency.

To create a layered effect, push the rice mixture towards one side of the pan and add beaten eggs to the center. Scramble the eggs until they form curds, which should take around 3 to 4 minutes.

Stir half of the cooked Spam back into the pan and mix it with the scrambled eggs and rice mixture. Add soy sauce and spicy chili paste, commonly referred as Sriracha, to the pan and mix well. Remove from heat.

Crack remaining eggs into a separate skillet over medium heat to cook them gently. Cook until the outer edges become opaque, taking about 1 minute. Cover the skillet and reduce heat to low to cook until the whites are completely set, requiring around 4 minutes. Season with salt and pepper according to taste.

Place the cooked eggs on top of the fried rice, add the reserved Spam; and garnish with nori seaweed sheets, scallions, and sesame seeds for added flavor and texture.
